A New Day: 1-1-11

HAPPY NEW YEAR, FRIENDS!

Did you have fun last night? Were you able to stay awake to welcome the new year?

I fell asleep before my date with Anderson Cooper. I had insomnia the night before last and ended up watching the Burn Notice marathon until 4:00 AM. Tried as I might to stay awake, I could not. Hopefully, Anderson understands.

We did celebrate, earlier in the evening, with a nice dinner at home. We started with shrimp cocktail.

For the cocktail sauce, I simply mixed ketchup, horseradish, and fresh lemon juice to taste. Because I know you are dying to know...this is the ONLY way I will eat horseradish.

After I finished putting the shrimp cocktail together, I pulled the main attraction out of the refrigerator. These were the feistiest lobsters I've ever seen. While cutting the bands off their claws, one of them grabbed my kitchen shears. I had a fight on my hands trying to get them back. Better my kitchen shears than my fingers!

Lobster is so easy to prepare...once you retrieve your kitchen shears. Simply bring a huge pot of water to a boil, add A LOT of salt to the water once it is boiling, drop the lobster in, bring back to a boil and cook for 15 minutes (for 1 1/4 pound lobster).

I read somewhere you should drop them in the water head first so that is how I do it. I don't know if that is the more humane way to do it or if there is an actual flavor reason.

See the steam

The lobster was accompanied by strip steak, wild rice, and dinner rolls from the deli.

Years ago, we vacationed throughout New England. While in Bar Harbor, Maine, we enjoyed a wonderful lobster dinner. The meal included soup or salad, one whole lobster, a side dish, AND blueberry pie for dessert. The cost for this feast? I'll let you think about it.

I don't bake pies. Pie crust is my Achilles' heel, but I wanted to complete this meal with something delicious, fun, and in keeping with the Maine theme. Where did I find my solution? Blogland, of course. I can't believe you needed to ask.

Jenny Matlock's Cupcake in a Jar came to my rescue. Can I tell you how delicious this recipe is? Admittedly, I was a little concerned about the icing because it sounded more like a homemade recipe for wallpaper paste, but it is YUMMO! Instead of me writing the recipe here, I'll send you there because reading Jenny's p0st is well-worth the trip. She is a hoot!

I used Smuckers Simply Fruit Blueberry Spread for the filling.

After dinner, Jordan said, "Now THAT was a feast!" Have I mentioned lately how much I love this kid...um...man?

OH! The Lobster Dinner in Bar Harbor, Maine...cost $9.95! No, I didn't drop a number....it was less than $10 and the restaurant had a lovely view of the harbor!

  3. Sounds like a great meal to usher in the new year!! Anderson Cooper and Kathy Griffin were a hoot, as usual. Luckily for me I live on the West Coast so I am awake for the live broadcast of Anderson and Kathy at 9:00 pm pst,
I never make it to midnight PST. I do sorta wake up with the pots banging, cheering and fireworks go off around me--after that stops I drift peacefully back to sleep. Wishing you and yours and magical 2011.
    Take care, Jeanette
